

Our lamb is only available to buy FRESH and is therefore seasonal lamb. As a general rule we start to sell Spring Lamb in the middle of May through to mid June. After that our Summer Lamb starts, these are sold through until October when we start selling Autumn Lamb which will last through until February. Gillgate Heather lamb is usually available in late August and September.

We have about 50 North England Mule ewes that are crossed with a Texel Ram; these give birth in February and provide our first early lambs for sale. Completely grass reared these are very succulent fresh boxes of meaty cuts and joints. Boxes about 15kg or 7.5kg for a half box.
The first of our main crop of lambs - mainly cross-bred lambs out of Swaledale ewes. Lambs that are reared solely on our herb rich pastures and flower meadows. Boxes about 15kg or 7.5kg for a half box.
Possibly the sweetest purest flavour of any lamb. Only a very few of these hill lambs are ready once they've been brought off the heather moors in August/Sept. Characterised by small lean lamb chops some say that you can nearly smell the purple heather as they cook. They are the nearest thing to 'wild lamb' having been reared purely on heather and mountain grasses, they will have only seen humans few times in their entire lives. Tender and succulent legs of lamb, a delicacy that must not be missed. Unfortunately numbers are very limited and pre-booking is recommended. Boxes about 13 kg or 6.5kg for a half box.
Autumn lambs develop more flavour and weight as they mature through the autumn and winter. Many have summered on the Heather moorland and are fed a little extra to bring them ready for eating. Larger joints and chops than any of our other lamb products but still succulent and tasty! Some are cross-bred lambs and provide large boxes about 16-18kg or 8-9kg for a half box; others are pure Swaledale lambs and provide smaller boxes about 12-14kg.
